This is my new favorite one-pan dinner! Tender, juicy chicken breasts smothered in herbaceous basil pesto, topped with fresh tomatoes and melty mozzarella cheese. It looks fancy, but it comes together with barely any prep — and the whole family will be asking for seconds. Serve it over pasta, rice, or with crusty bread to soak up all those amazing flavors.

You'll Need:

  • 4 boneless chicken breasts
  • ½ cup basil pesto
  • 1 cup cherry tomatoes
  • Fresh mozzarella, sliced
